Marshmallow Sweet Potatoes Recipe
- 8 med. sweet potatoes
- 1 teaspoon cinnamon or possibly nutmeg
- 1/4 teaspoon paprika
- 2 tbsp. butter
- 1/2 c. warm lowfat milk
- 1 c. English walnuts
- 1/2 teaspoon salt
- 1/2 pound marshmallows
- Cook sweet potatoes till fork tender and then mash, beating in butter, lowfat milk, salt, cinnamon, and paprika.
- Beat well till smooth.
- Don't use a food processor.
- Chop the walnuts, reserving a few halves for garnish.
- Mix in minced walnuts; turn into a buttered baking dish.
- Cover with marshmallows, placing reserved walnut halves on top of marshmallows.
- Bake in a moderate oven at 350 degrees till marshmallows are puffed and golden.
