Michelles Lasagne

  1. Cook noodles according to package directions.
  2. Drain, rinse well, and set aside.
  3. In large pot, fry ground chicken in a little water until it loses its pink colour.
  4. Then add onion, both bell peppers, and spices.
  5. Cook covered, on medium heat until veggies are tender.
  6. Stir occasionally.
  7. Add P.C.
  8. sauce and 1 cup Ragu.
  9. Stir.
  10. Simmer, covered until heated through.
  11. Add cottage cheese and tomato paste.
  12. Stir.
  13. Cover and simmer until cheese and paste are melted through, about 10 minutes.
  14. Use 2 9"x 13" baking dishes.
  15. Spoon few tablespoons of Ragu onto bottoms of each pan.
  16. Place 3 lasagne noodles in each pan to cover bottom.
  17. Spoon sauce on to just cover noodles.
  18. Repeat layers using 3 layers of noodles and ending with sauce.
  19. Sprinkle with grated cheese.
  20. Cover with tinfoil and bake 400 degrees about 15-20 minutes or until cheese is melted and lasagne is bubbling.
  21. Remove from oven and let sit for about 5 minutes before cutting.
  22. Cut each pan into 8 equal pieces.
  23. Serve.
  24. Extra lasagne can be frozen.
