Ginger Confetti Rice

  1. In a medium saucepan, bring 2 cups of water to a boil.
  2. Add the rice and stir once.
  3. Reduce heat, cover and simmer 15-20 minutes or until the water is absorbed and the rice is tender.
  4. Remove from the heat and let stand 3 minutes.
  5. Add scallions, roasted red pepper, ginger and sugar to the rice.
  6. Stir with a fork to combine and fluff.
