Ham, Pepper-Cheese, and Apple Tea Sandwiches

  1. Spread bread slices generously with pepper-cheese spread.
  2. Top with 2 folded slices of ham.
  3. Use a serrated knife to trim crusts into rectangles, approximately 2 1/2" x 3".
  4. Tuck 2 to 3 arugula leaves between ham slices.
  5. Thinly slice apple and dip in lemon juice to keep slices from turning brown.
  6. Arrange 3 slices on top of each sandwich.
  7. (Sandwiches can be made up to an hour ahead.
  8. Cover with damp paper towels and wrap tightly with plastic wrap.
  9. Refrigerate until ready to serve.)
