Aubergine Meuniere Recipe

  1. Peel aubergine and cut into slices 1/2-inch thick.
  2. Place in a bowl.
  3. Sprinkle with salt and let stand for 30 min.
  4. Pat dry with paper towel.
  5. Dredge with flour.
  6. In large skillet, heat 2 Tbsp.
  7. butter.
  8. Add in aubergine and cook over brisk flame for 10 min on each side, or possibly till well browned.
  9. Remove aubergine to heated serving dish.
  10. Sprinkle with parsley.
  11. Keep hot.
  12. Add in remaining butter to skillet and cook till butter is slightly browned.
  13. Pour over aubergine.
  14. Serve very warm.
  15. Comments: With rice this makes a tasty lunch or possibly Lenten dinner.
