Dashi Stock for Ochazuke with Broiled Eel
- 500 ml Water
- 10 cm Kombu for dashi stock
- 2 handfuls Bonito flakes
- 1 tsp Usukuchi soy sauce
- 1 tsp Salt
- Place the kombu in a pan, and remove it just before the water comes to a boil.
- Add the bonito flakes and let simmer for a while.
- Turn the heat off, and let the soup sit for about 5 minutes.
