Golden Caramel Cheesecake Bars

  1. Heat oven to 350F.
  2. Line 9-inch square pan with foil, with ends of foil extending over sides; spray with cooking spray.
  3. Process 14 cookies in food processor until finely crushed; mix with butter.
  4. Press onto bottom of prepared pan.
  5. Bake 10 min.
  6. or until golden brown.
  7. Cool 10 min.
  8. Meanwhile, microwave caramels and water in microwaveable bowl on HIGH 1 min.
  9. or until caramels are completely melted, stirring every 30 sec.
  10. Coarsely chop remaining cookies.
  11. Beat cream cheese and marshmallow creme in large bowl with mixer until well blended.
  12. Add egg; mix well.
  13. Stir in chopped cookies; pour over crust.
  14. Drop spoonfuls of caramel over batter; swirl gently with knife.
  15. Bake 20 to 25 min.
  16. or until centre is almost set.
  17. Cool completely.
  18. Refrigerate 4 hours.
  19. Use foil handles to lift cheesecake from pan before cutting into bars.
