Caribbean Pepper Oil
- 1 each shallots minced
- 1 each scallions, spring or green onions minced
- 1 each garlic cloves minced
- 3 each chives minced
- 1 each thyme sprigs minced
- 1 each parsley sprigs minced
- 1 each scotch bonnet chile peppers seeded, chopped
- 2 each sweet bell peppers
- 1 3/4 cups olive oil, extra-virgin
- Mix all of the ingredients together and pour them into a bottle.
- Stopper the bottle and allow it to stand in a dark place for a week.
- Use sparingly.
