Battered Onion Quiche Recipe
- 175 gm Plain flour, sieved (6oz)
- 1 pch Salt
- 40 gm Lard, (1 1/2oz)
- 40 gm Hard margarine, (1 1/2oz)
- 3 Tbsp. Water
- 1 Tbsp. Vegetable oil
- 3 lrg Onions, finely minced
- 1/2 tsp Grnd nutmeg
- 1/2 tsp Grnd coriander
- 3 med Size Large eggs, beaten Salt and freshly grnd black pepper
- 10 x Battered onion rings
- 1 x 142 millilit lowfat sour cream
- For the pastry: Preheat the oven to 200 C, 400 F, Gas Mark 6.
- Sieve the flour with a healthy pinch of salt.
- Rub the lard and margarine into the flour till it resembles breadcrumbs.
- Add in the water till it forms a ball of pastry.
- Roll out the pastry, large sufficient to line an 20cm (8inch) flan ring.
- Lay a piece of foil on top of the pastry inside the flan ring and bake in the oven for 15 min.
- Remove the foil from the pastry and return to the oven for a further 5 min.
- For the filling: Heat the oil in a pan and gently cook onion till it is softened.
- Break the Large eggs into a bowl, add in nutmeg and coriander then season to taste.
- Add in the onions and pour into the flan.
- Arrange the battered onion rings on top and bake in the oven for 40-50 min or possibly till it is hard to touch.
- NOTES : As a variation of onion quiche a topping of battered onion rings gives a crisp finish.
