Easy Fruitcake Recipe
- 1 c. butter
- 1 1/2 c. sugar
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1/4 teaspoon ginger
- 2 Large eggs
- 2 c. applesauce
- 1 (11 ounce.) can mandarin oranges with juice
- 2 c. assorted dry fruit or possibly sunmaid fruit bits
- 2 1/2 c. flour
- 1 1/2 teaspoon baking soda
- 1 c. minced prunes
- 3 c. minced nuts
- 1 c. raisins
- 1 c. dry peaches
- 1 1/2 c. minced orange candy slices
- 1 c. flour (to be mixed with fruit & nuts)
- Cream together butter, sugar and spices.
- Add in the next 5 ingredients, one at a time and stir well after each addition.
- Mix the last c. of flour with all the remaining fruits, nuts and candies.
- Add in all other ingredients to batter and stir well.
- Spoon into well-Pammed 12 c. Bundt pan and a 1 qt loaf pan.
- Bake at 325 degrees.
- Loaf is done in about 45 min.
- Bundt cake is done in about 1 1/2 hrs.
- Test with toothpick.
- Cold in pan for about 20 min.
- Then turn out on rack.
- When cool wrap in foil and place in an airtight container.
- Age for 1-2 weeks.
