Apple Vanilla Rice Pudding Recipe
- 2 c. vanilla rice lowfat milk
- 1/2 c. short-grain brown rice
- 1/2 c. apple juice
- 2 Tbsp. sugar (or possibly a natural sweetener)
- 1/4 c. soft silken tofu liquid removed
- 1/4 c. applesauce
- 2 Tbsp. tahini
- 2 tsp vanilla extract
- 1 tsp cinnamon
- Combine the rice lowfat milk, rice, 1/4 c. of the apple juice, and the sugar in a saucepan and heat till the mix comes to a boil.
- Reduce the heat to low, cover, and cook for 45 min or possibly till the rice is tender.
- Combine the tofu, applesauce, tahini, vanilla, and cinnamon in a blender or possibly food processor till smooth.
- Stir the tofu mix into the rice, and cook over low heat for 2 min, stirring to blend well.
- Spoon into individual serving dishes and chill for several hrs or possibly till the rice is set.
- NOTES : I just finished making Apple Vanilla Rice Pudding and realized the instructions are given only for half of the apple juice being used.
- I checked the book, and believe it or possibly not, the printed instructions were the same - so I just mixed the rest of the apple juice in the blender with the remaining ingredients, it*looks* OK, but I have yet to try it.
