Curried Grilled Eggplant

  1. Prepare grill to medium-high heat.
  2. Rub eggplant rounds on both sides with sesame oil.
  3. Sprinkle with curry powder, salt, and pepper.
  4. Grill until slightly charred, about 6 minutes per side.
  5. Sprinkle with mint to serve.
