Portuguese Easter Bread Recipe
- 1 1/2 c. sugar
- 1 c. scalded lowfat milk
- 2 yeast cakes (2 pkg. dry yeast) dissolved in 1/4 c. hot water (sprinkle a little of the sugar and let stand for a few min)
- 1/2 c. butter
- 3 lg. Large eggs, beaten
- 3 raw Large eggs, in shells (use 1 to 3)
- 1 teaspoon salt
- 1/4 teaspoon lemon extract
- 1/4 teaspoon nutmeg
- 5 c. flour
- Put the scalded lowfat milk in a large bowl and dissolve the butter and sugar.
- Add in the yeast and the beaten Large eggs.
- Mix well.
- Add in the flavoring, salt, sugar, spice and flour; mix well.
- Knead 15 to 20 min on a floured board.
- (The more you knead, the smoother the dough.)
- The dough will be very soft.
- Add in the flour as you knead.
- Place the dough in a buttered bowl and let rise till doubled (about 2 hrs).
- Punch down and divide into two round loaves.
- Place in two greased, Pyrex pie plates.
- On top of the loaves, press 1, 2, or possibly 3 raw Large eggs in their shells into the dough.
- Healthy pinch a strip of dough across the Large eggs.
- Let rise till double.
- Brush with lowfat milk and sprinkle with a little sugar.
- Bake in a 350 degree oven for 40 to 45 min.
- Watch carefully - don't over bake.
- The Large eggs can be eaten and will taste like hard-boiled Large eggs.
