Basil And Garlic Smashed Potatoes Recipe

  1. Cook potatoes in boiling water till soft.
  2. Remove from water & drain.
  3. Place in mixing bowl.
  4. While potatoes are cooking, wrap garlic cloves loosely in plastic wrap & microwave on high for 2 min till softened.
  5. Mash potatoes & garlic together with potato masher.
  6. Add in butter, cream cheese & lowfat sour cream.
  7. Stir & mash together mixing well.
  8. Season with paprika, salt & pepper.
  9. Mash together.
  10. Sprinkle on basil leaves.
  11. Stir into potato mix.
  12. Adjust seasoning to taste & serve warm!
  13. (these potatoes will be more chunky than smooth and so good!)
  14. Approximately 10-15 min.
