Ripe Olive Tamale Casserole

  1. Pre-heat oven to 350 degrees.
  2. In a casserole dish that can go from stove to oven: Brown turkey in oil.
  3. Chop onion and add onion to turkey, cook until soft.
  4. Add tomatoes, corn (cooked if frozen), chili powder, green chilis, and heat to boiling.
  5. Reduce heat and simmer for 5 minutes.
  6. Stir in corn meal slowly, add olives, mix in 2 cups cheese.
  7. Top with remaining 1 cup of cheese and cook in oven uncovered for 35 minutes.
