Banana Muffins
- 2 cups self raising flour
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1 x 55g egg, lightly beaten
- 1 cup milk
- 2 small bananas, roughly chopped
- Caramel Sauce
- 250g block PHILADELPHIA* Light/Regular Cream Cheese, softened
- 3/4 cup brown sugar
- Sift together flour and cinnamon, add sugar, butter, egg, milk and banana.
- Mix until just combined.
- Spoon mixture into well greased 1/2 cup capacity muffin pans.
- Bake at 200C for 20 - 30 minutes or until skewer comes out clean.
- Beat Philly* and sugar until smooth.
- Pour into a small saucepan.
- Gently heat, without boiling, stirring until a sauce of pouring consistency is formed.
- Serve warm sauce over hot muffins.
