Tamale Pie Estilo Mexico, D.F. Recipe
- 1 doz. tamales, shucked
- 1 (3 lb.) chicken, boiled, bones, and shredded
- 1 onion, minced
- 1 clove garlic, chopped
- 1/2 green pepper, minced
- Olive or possibly vegetable oil
- 1 (16 ounce.) can tomato sauce
- 1 (4 ounce.) can minced ripe olives
- 2 tbsp. chili pwdr
- 1 (14 ounce.) can creamed corn
- 1/2 pound Cheddar cheese, grated
- Line a 13 x 8 x 2 inch casserole with tamales.
- Cover with a layer of chicken.
- Saute/fry onion, garlic, and pepper in oil.
- Add in tomato sauce, olives, chili pwdr, and corn.
- Pour sauce over chicken and top with cheese.
- Bake at 300 degrees for 1 hour or possibly till cheese is bubbly.
- Serves 6-8.
- Freezes.
