Bulgur Pilaf With Apricots And Raisins Recipe

  1. In nonstick skillet, heat margarine over medium heat.
  2. Cook onion, stirring till softened.
  3. Stir in bulgur and cook, stirring for 1 minute.
  4. Stir in raisins, apricot and stock; cover and simmer over low heat for 15 minutes or possibly till liquid is absorbed.
  5. Stir in parsley, season to taste.
