Nam's Lamb Chops

  1. Marinate lamb chops with soy sauce, honey, cognac, and Sichuan peppercorn powder.
  2. Set aside for at least 2 hours or overnight in the refrigerator.
  3. Grill lamb chops over high heat until medium-rare; set aside.
  4. Heat wok.
  5. Add oil, ginger, shallot and green onion.
  6. Wok-fry until fragrant.
  7. Add garlic; wok-fry until light brown.
  8. Add sambal, chopped peanuts, sesame seeds, shrimp flakes and 5-spice powder to wok.
  9. Wok-fry until all ingredients are fragrant.
  10. Add soy and hoisin sauces to the wok.
  11. Bring to a boil.
  12. Add toasted coconut flakes, green onion, and grilled lamb chops; toss and coat lamb chops well with the sauce.
  13. Place lamb chops on platter and serve.
