Cheesy sausage with poached eggs
- 1/4 lb bulk sausage, I used Odoms Tennessee Pride
- 12 oz mozzarella cheese
- 2 large eggs
- 1 quart water
- 1 tsp paprika
- 1/4 tsp chopped cilantro
- 1 tbsp water
- In a pot brown your sausage.
- Drain the liquids off.
- Boil water in a pot
- Add mozzarella cheese stirring constantly till cheese and sausage is incorporated.
- Then add water when cheese can be lifted off the bottom without sticking drain liquid off.
- take cheesy sausage and put on a plate form into a big patty.
- Add paprika, garlic, and pepper.
- In a pot of boiling water add the two eggs.
- When the whites are done remove to top of cheesy sausage patty.
- Sprinkle just a little paprika and cilantro over entire dish.
