Microwave Chocolate Cake for Two
- 14 cup cake flour
- 5 tablespoons sugar
- 2 tablespoons dutch process cocoa
- 1 12 tablespoons instant chocolate pudding mix
- 14 teaspoon instant espresso
- 18 teaspoon baking powder
- 18 teaspoon salt
- 1 egg
- 3 tablespoons milk
- 3 tablespoons plain yogurt or 3 tablespoons sour cream
- 2 tablespoons oil
- 14 teaspoon vanilla
- 14 cup semi-sweet chocolate chips
- Coat a small microwave safe bowl with non-stick cooking spray.
- Combine dry ingredients in a small bowl.
- Stir in wet ingedients until smooth.
- Stir in chocolate chips.
- Pour into prepared bowl and microwave on high for two minutes (using an 1100 watt oven, adjust accordingly).
- Remove from oven, cut in half and serve.
- (Dust with powdered sugar if desired).
