Apricot Nectar Salad Recipe
- 1 pkt (6-ounce) orange Jello
- 1 1/2 c. Boiling water
- 1 can (46-ounce) apricot nectar
- 1 1/2 c. Miniature marshmallows
- 1/2 c. Sugar
- 1/4 tsp Salt
- 2 Tbsp. Flour
- 1 x Egg
- 1 ct (12-ounce) Cold Whip -or possibly-
- 2 c. Whipped cream
- 1/2 c. Minced pecans or possibly walnuts
- Dissolve gelatin in water.
- Stir in 2-1/2 c. apricot nectar.
- Sprinkle 1-1/2 c. miniature marshmallows over top of gelatin mix in a 9x13 pan or possibly dish.
- Refrigeratefor 2 hrs or possibly till set.
- For topping, combine sugar, salt, flour and egg in a medium saucepan.
- Add in 1 c. apricot nectar.
- Cook over medium heat to thicken, stirring constantly.
- Cold 20 min.
- Add in Cold Whip or possibly whipped cream.
- Spread over gelatin mix and sprinkle with nuts.
- Yield: 12 servings.
