Smoked Noodles
- Wood Chips
- 3 cups All-purpose Flour
- 1 cup Smoked Flour
- 2 Tablespoons Cornstarch
- 1 Tablespoon Vital Wheat Gluten
- 1/2 cups Water
- Soak a handful of wood chips for 30 minutes in water.
- Preheat the oven to 350 degrees F. Place the wood chips on a rimmed baking sheet and place it on the bottom shelf of the oven.
- Place the flour on a sheet of parchment paper on a pizza pan.
- Smoke the flour for 1 hour.
- Let cool before using.
- Combine 1 cup of the smoked flour with the cornstarch and wheat gluten.
- The rest of the flour can be reserved for more pasta, for cookies or for other applications.
- Add the water and incorporate thoroughly.
- Knead the dough for about 5 minutes, or until smooth.
- Use a pasta maker to roll out the pasta dough and cut to your desired thickness.
- I like linguine.
- Cook the pasta for about 3 minutes, or until al dente.
