Smoked Noodles

  1. Soak a handful of wood chips for 30 minutes in water.
  2. Preheat the oven to 350 degrees F. Place the wood chips on a rimmed baking sheet and place it on the bottom shelf of the oven.
  3. Place the flour on a sheet of parchment paper on a pizza pan.
  4. Smoke the flour for 1 hour.
  5. Let cool before using.
  6. Combine 1 cup of the smoked flour with the cornstarch and wheat gluten.
  7. The rest of the flour can be reserved for more pasta, for cookies or for other applications.
  8. Add the water and incorporate thoroughly.
  9. Knead the dough for about 5 minutes, or until smooth.
  10. Use a pasta maker to roll out the pasta dough and cut to your desired thickness.
  11. I like linguine.
  12. Cook the pasta for about 3 minutes, or until al dente.
  13. Enjoy!
