Balsamic-Caraway Red Cabbage
- 11/2 pounds red cabbage, cut into chunks
- 11/2 cups water
- 1/4 cup balsamic vinegar
- 1 tablespoon brown sugar
- 1 teaspoon caraway seed
- Kosher salt
- Freshly ground black pepper
- In a medium pot, bring the cabbage, water, vinegar, sugar, caraway seed, 1 teaspoon salt and 1/2 teaspoon pepper to a simmer.
- Cook, covered, until the cabbage is tender, about 20 minutes.
- Uncover the pot and simmer until most of the liquid has evaporated, about 5 minutes more.
- Season with salt and pepper to taste and serve.
