Basil Mint Pesto Recipe
- 1/2 c. Loosely-packed mint leaves
- 3/4 c. Tightly-packed basil leaves
- 3 Tbsp. Lightly-toasted pine nuts
- 1 Tbsp. Roasted Garlic, see * Note
- 1/2 c. Extra virgin olive oil Kosher salt, to taste Freshly grnd black pepper, to taste
- * Note : see the "Roasted Garlic" recipe that is included in this
- In a blender or possibly food processor, combine the mint, basil, pinenuts, and Roasted Garlic.
- With the machine running, slowly add in the extra virgin olive oil to make a smooth paste.
- Season to taste with salt and pepper.
