Skillet Chicken Mandarin Recipe
- 1 frying chicken (cut up, 3/4 lb.)
- 1 1/2 teaspoon salt
- 6 tbsp. oil
- 2 tbsp. finely minced candied ginger
- 1/2 teaspoon grnd savory
- Pepper
- 2 c. orange juice
- 1/2 teaspoon paprika
- 1 (11 ounce.) can madarin oranges
- Combine flour, savory, salt and pepper in a paper bag, add in chicken and coat thoroughly.
- Heat oil in large skillet.
- Add in coated chicken and saute/fry over moderate heat till light brown.
- Add in seasoned flour mix if any remains and pour 1 1/2 c. orange juice over chicken.
- Sprinkle with ginger.
- Cover and bring to a boil, reduce heat and simmer about 30 min.
- Add in sugar to remaining orange juice and pour over chicken.
- Add in mushrooms.
- Dust with paprika, cover and simmer 10 min.
- Garnish with oranges.
