Veal Scallopini With Tomatoes
- 3 lb. veal scallopini
- 2 Tbsp. butter
- 1 lb. mushrooms, thinly sliced
- 4 Tbsp. chopped Italian parsley
- 4 Tbsp. fresh grated Parmesan cheese
- 1 (16 oz.) can crushed Italian style tomatoes
- flour
- 2 Tbsp. olive oil
- 2 finely minced garlic cloves
- 4 Tbsp. fresh chopped basil
- 1 c. Marsala wine
- salt and freshly ground pepper
- 2 Tbsp. lemon juice
- garlic powder
- lemon pepper
- bay leaf
- thick slice of onion
- Place these ingredients on top of each shank.
- Pour 1 cup or less of water in bottom of casserole along with about 1/2 cup white wine.
- Bake at 300u0b0 for 3 hours, covered.
