Cracked Canoe Danish Fondue

  1. Place a medium saucepot over medium heat and add the chopped bacon.
  2. Render the fat from the bacon, crisping it gently.
  3. Add onions to saute and the butter to melt and brown slightly.
  4. Now add the flour and stir to combine and make a smooth roux.
  5. Add the beer a little at a time, whisking to ensure that no lumps form.
  6. Add the grated cheese until melted, transfer to a fondue pot and serve with crusty bread and sweet and sour gherkins - so delicious!
