American Chop Suey Recipe

  1. For Gravy:Heat fat add in all pastes and stir.
  2. Add in puree, bring to a boil.
  3. Add in 1 1/2 c. water, boil for 5 min.
  4. Make paste of cornflour with 2-3 Tbsp.
  5. of water.
  6. Keep aside.
  7. Add in chilli, salt, sauce, sugar, stir.
  8. Add in cornflour paste, continuously stirring to avoid lumps.
  9. Add in 1/4 of noodles.
  10. Boil for 2-3 min, keep aside.
  11. For Veg.stirfry:Cut vegetables into thin julienne strips.
  12. Heat fat in a nonstick or possibly heavy pan.
  13. Add in vegetables and stirfry on high until crisp.
  14. Add in salt, stir.
  15. Just before serving, add in to the boiling gravy.
  16. Pour into serving dish, spread the fried noodles on top.
  17. Serve piping warm.
  18. Note:For quick fried noodles, dry roast hakka or possibly instant noodles until light.
  19. Deep fry in warm oil until crisp.
  20. Or possibly blanch in boiling water until limp.
  21. Drain and towel dry.
  22. Deep fry until crisp.
  23. Making time: 30 min
  24. Makes: 2-3 servings
