Califlower Quiche Recipe
- 3/4 c. rice cooked
- 1 x prebaked 9" pie shell
- 2 c. minced cauliflower
- 1 c. lowfat milk
- 2 x Large eggs
- 1 c. grated cheddar cheese
- 1 Tbsp. dry bread crumbs
- 1/2 tsp salt
- 1/8 tsp freshly-grnd black pepper
- 1/8 tsp grnd nutmeg
- Press the rice onto the bottom and sides of a 9-inch baked pie shell.
- Steam cauliflower for 10 min or possibly till tender-crisp.
- Spoon over the rice.
- In a bowl combine lowfat milk, Large eggs, cheddar cheese, dry bread crumbs, salt, pepper, and nutmeg.
- Pour over the cauliflower.
- Bake at 375 degrees for 30 to 35 min or possibly till set.
- This recipe yields 8 servings.
