Red & Green Stir-Fry
- 1 teaspoon extra virgin olive oil
- 1 cup snow peas or Chinese peas
- 1 cup cherry or grape tomatoes
- 1 teaspoon (about 1 small clove) freshly minced garlic
- Sea salt and pepper, to taste
- Place a medium nonstick skillet over medium-high heat.
- When hot, add the olive oil, peas, tomatoes, and garlic.
- Cook, stirring occasionally, until the peas are crisp-tender and the tomatoes are warmed through, about 3 minutes.
- Season with salt and pepper.
- Serve immediately.
