Peanut Butter Cup Brownies

  1. Preheat oven to 350F.
  2. Prepare mini muffin pans by spraying lightly with cooking oil.
  3. In a small pot, mix the butter, water and cocoa powder and bring to a boil.
  4. Set aside.
  5. In a large bowl, mix the flour, sugar, baking soda, salt, buttermilk, vanilla and eggs.
  6. Add in the chocolate mixture and mix until well combined.
  7. Fill each muffin cup with a heaping teaspoon.
  8. Bake 13-15 minutes.
  9. Let cool in pan.
  10. Indent each brownie with a spoon or the tip of your finger.
  11. Heat the peanut butter and spoon a little into each brownie.
  12. Top with peanut butter and chocolate chips.
  13. Let cool completely.
  14. Serve.
