Alpine Leek and Bean Sprout Soup
- 4 stalks Alpine leek (or ramps)
- 1 bag Bean sprouts
- 1 tbsp Sesame oil
- 1 White sesame seeds and bonito flakes
- 2 tbsp Chinese Chicken stock powder
- 20 ml Soy sauce
- 20 ml Sake
- 1 tsp Miso
- 1 dash Grated ginger
- 1000 ml Water
- Refer to thefor how to prepare the alpine leeks.
- Heat the sesame oil in a pot and saute the bean sprouts and alpine leeks.
- I usually rip the alpine leeks apart into smaller pieces, but you can chop them up into whatever size that you like.
- Once the vegetables are tender, pour in the water and bring it to a boil.
- When it comes to a boil, add the seasonings and simmer for 5 to 10 minutes and it's done.
- Sprinkle on white sesame seeds or bonito flakes if desired.
