Alpine Leek and Bean Sprout Soup

  1. Refer to thefor how to prepare the alpine leeks.
  2. Heat the sesame oil in a pot and saute the bean sprouts and alpine leeks.
  3. I usually rip the alpine leeks apart into smaller pieces, but you can chop them up into whatever size that you like.
  4. Once the vegetables are tender, pour in the water and bring it to a boil.
  5. When it comes to a boil, add the seasonings and simmer for 5 to 10 minutes and it's done.
  6. Sprinkle on white sesame seeds or bonito flakes if desired.
