Greek-Style Turkey Burgers with Garlic Dill Mayo

  1. For the mayo:
  2. In a small bowl combine the mayo, minced dill, vinegar, pressed garlic clove, salt and pepper.
  3. Mix until combined, cover bowl with plastic wrap and stick it in the fridge for at least one hour.
  4. For the burgers:
  5. In a large bowl combine the ground turkey, minced parsley and dried herbs.
  6. Add the minced olives, roasted red bell pepper and onions to that as well.
  7. Add the crumbled feta and pressed garlic and mix by hand until everything comes together.
  8. Form into 4 (or 6 depending on how many you are serving and what size burgers you want) patties.
  9. Heat a large griddle (you can use a skillet or grill too just make sure they are well oiled) to 375 F. Spread olive oil over top and cook each burger for 6-8 minutes on the first side.
  10. Flip and repeat for 4-6 more minute or until the burger is fully cooked.
  11. Spread some of the garlic dill mayo on one side of each of the pita bread quarters.
  12. Top with the Greek turkey burger, lettuce, red onion, cucumber and tomato.
  13. Top with another pita quarter.
