Sausage Stew
- 1 12 lbs Italian sausage, cut into 1 inch slices (sweet or hot)
- 4 large potatoes, cut into 3/4 inch cubes
- 1 onion, sliced small
- 1 garlic clove, minced
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 lb frozen peas
- 1 teaspoon olive oil
- 1.
- In a dutch oven, drizzle in a little olive oil and brown the sausage until almost cooked.

- When almost cooked, stir in onions and garlic and cook for 30 more seconds.
- 3.
- Leaving everthing in, fill the pot with cold water until 2/3 full.
- Bring to a boil and deglaze.
- Add potatoes, salt and pepper.
- Boil 2 minutes and reduce to low heat.
- 4.
- Simmer on low boil until water reduces to 1/2 pot.
- Add frozen peas and simmer for at least 15 more minutes.
- 5.
- Salt and pepper to taste.
