Orange Refrigerator Cookies(From The Files Of Ola Dortch Williams)
- 2 3/4 c. sifted flour
- 1/2 tsp. salt
- 1/4 tsp. soda
- 1/4 tsp. baking powder
- 1/2 c. shortening
- 1/2 c. butter
- 1/2 c. brown sugar, firmly packed
- 1/2 c. granulated sugar
- 1 egg (unbeaten)
- 2 Tbsp. orange juice
- 1 Tbsp. grated orange rind
- 1/2 Tbsp. lemon extract
- 1 c. finely chopped pecans
- Sift together flour, salt, soda and baking powder.
- In large bowl, combine shortening, butter, brown sugar, granulated sugar and 1 unbeaten egg.
- Beat on medium-high speed for 1 minute. Gradually add, alternately, sifted flour mixture and orange juice, orange rind and lemon extract.
- Add 1 cup finely chopped pecans. Mix all and shape into a long roll.
- Wrap in plastic wrap and chill in refrigerator several hours or overnight.
- Slice thin and put on a greased cookie sheet.
- Bake at 350u0b0 for 12 minutes.
