Quick & Easy Chicken Coconut Rice
- 1 cup Basmati Rice
- 1 cup Water
- 1 cup Coconut Milk
- 1 teaspoon Sugar
- 1/2 teaspoons Salt
- 1/4 cups Frozen Peas
- 1/2 cups Cooked Chicken
- 1/4 cups Roasted Peanuts, For Topping
- 1/4 cups Chopped Cilantro, For Topping
- 1.
- Wash rice and put in the rice cooker.
- Add water, coconut milk, sugar, salt and peas.
- 2.
- Chop or shred leftover cooked chicken and put in the rice cooker with the rest of the ingredients.
- 3.
- Close the lid and turn on the rice cooker.
- 4.
- When the rice is done, stir it all up and top with the roasted peanuts and cilantro.
- Enjoy!
