Sophie's red pepper stuffed sundried tomato balls

  1. Mix flour, salt, bicarbonate of soda and baking powder in a bowl.
  2. In another bowl, mix your sugar, yeast, oil and then transfer into your flour mixture.
  3. Mix to form a consistent dough, then turn out onto a floured surface.
  4. Knead the tomatoes into the bread, flouring regularly.
  5. After 10 minutes, place into a bowl and cover.
  6. Leave for at least 1 hour.
  7. While your dough rises, mix your filling ingredients together and put in the fridge.
  8. After an hour, preheat your oven.
  9. Cut the dough into pieces approx 1 1/2" inches across.
  10. Form a well in the dough ball and stuff with as much filling as you can.
  11. Carefully seal it up and place on a lightly greased baking tray.
  12. Repeat until you've used all your dough.
  13. Brush the tops with olive oil, and sprinkle with cornmeal if you wish.
  14. Bake for 15 minutes or until golden brown.
  15. Serve hot and enjoy!
