Hoppin' John

  1. Brown sausage or ground meat in skillet until no longer pink.
  2. Drain & set aside.
  3. In small skillet saute green pepper and onion, in olive oil until slightly tender.
  4. Add tomatoes and spices along with bay leaf.
  5. Stir in browned sausage and black eye peas.
  6. Cover and simmer on low 45 minutes ,stirring occasionally.
  7. Serve with a scoop of cooked brown rice with a dash of hot sauce.
