Mother's Cream Of Broccoli Soup Recipe
- 8 ounce. fresh broccoli, finely minced
- 1 quart. water
- 1 quart. Half & Half
- Healthy pinch of white pepper
- 1/4 teaspoon baking soda
- 4 cubes chicken bouillon
- 12 tbsp. butter
- 10 tbsp. flour
- In a large saucepan, combine broccoli, water, Half & Half, white pepper, baking soda, and chicken bouillon; bring to a boil.
- While waiting for soup to boil, in a small skillet, slowly heat butter, adding flour.
- Stir slowly with a wire whisk, making sure there are no lumps.
- After soup comes to a boil, reduce heat and add in butter and flour mix, stirring in slowly with wire whisk.
- When soup has reached desired thickness, return to light boil for 5 to 8 min.
- Yield: 12 (1 c.) servings.
