Cinnamon, Apple and Oat Muffins
- 1-1/2 cup large flake rolled oats
- 1 cup whole wheat flour
- 1/2 cup packed brown sugar
- 1 Tbsp. Magic Baking Powder
- 2 tsp. ground cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 egg
- 3/4 cup 1% milk
- 3/4 cup unsweetened applesauce
- 1/3 cup canola oil
- 1 tsp. vanilla
- Heat oven to 400 degrees F.
- Combine first 7 ingredients in large bowl.
- Whisk remaining ingredients in medium bowl until blended.
- Add applesauce mixture to dry ingredients; stir just until moistened.
- Spoon into 12 muffin pan cups sprayed with cooking spray.
- Bake 20 min.
- or until toothpick inserted in centres comes out clean.
- Cool 5 min.
- before removing muffins from pan to serve.
