Char's Bean Pie
- 1 lb dried navy beans (cooked in water, makes 6 cups)
- 6 eggs
- 1 (12 ounce) can evaporated milk
- 1 cup butter, melted
- 1 tablespoon nutmeg
- 1 tablespoon cinnamon
- 6 cups sugar
- 38 cup vanilla
- Cook beans in water until soft.
- Drain beans.
- Preheat oven.
- to 350 degrees.
- In food processor, blend beans, melted butter, and milk.
- Transfer to large mixing bowl.
- In smaller bowl, whip eggs, nutmeg, cinnamon, and vanilla.
- Add sugar and egg mixture to bean mix.
- Mix well.
- Pour into pie shells.
- Bake about one hour or until golden brown.
- Makes about six 9" pies.
- Tip: 5 minutes after removing pies from oven, cover with plastic wrap that clings.
