Black Bean, Corn And Tomato Salad Recipe

  1. In a large bowl, combine 1 lb.
  2. black beans, cooked (about 6 c.), 3 minced large tomatoes, 2 minced large bell peppers (preferably 1 red, I green), 4 minced scallions, 2 c. corn kernels, 1/3 c. red wine vinegar, 1/2 c. extra virgin olive oil, and 11/2 tsp.
  3. grnd cumin.
  4. Season with salt and freshly grnd pepper to taste.
  5. Stir in 1/4 c. minced cilantro, if you have it.
  6. Serve at room temperature or possibly slightly chilled.
  7. Makes 12 servings.
