Avocado Basil Dressing Recipe

  1. Bring 2 c. of water to simmer, add in tofu and simmer for 2 min.
  2. Drain and cold tofu to room temperature in cool water- drain again.
  3. Puree tofu
  4. with next 8 ingredients in blender or possibly food processor.
  5. Stir in basil.
  6. Use
  7. immediately or possibly chill till serving.

  10. NOTES : Refresh your tofu by simmering or possibly steaming it for 2 min.
  11. (Unused tofu will keep, refrigerated, for a week-, cover in water and change water daily.)
  12. Serve this rich dressing over mixed greens or possibly on a salad of basmati rice, corn, and red peppers.
