Grilled Summer Vegetables.

  1. Cut the aubergine into quarter inch slices.
  2. Cut the courgettes diagonally into 1 cm half inch slices.
  3. Cut the peppers into large slices.
  4. Mix the oil, vinegar, garlic, oregano and black pepper in a large bowl.
  5. Add the vegetables.
  6. Cover with the mixture and leave to marinade for at least one hour.
  7. Cook the vegetables on a barbecue or under a hot grill until just tender, basting frequently.
