Black Beans and Rice
- 1 14 cups reduced-sodium fat-free chicken broth
- 34 cup long-grain rice
- 1 cup rinsed and drained canned black beans
- 14 cup chopped fresh cilantro
- 14 teaspoon salt
- Bring the broth to a boil in a meduum saucepan.
- Add rice.
- Cover, reduce heat, and simmer 18 minutes or until liquid is absorbed.
- Stir in black beans and cilantro, cook until thoroughly heated.
- Stir in salt.
