- 4 boneless skinless chicken breast (cubed)
- 1 large green bellpeper(chopped)
- 1 cup fresh mushroom of choice.(sliced)
- 1/2 small onion
- 2 zuccini (cubed)
- 1 salt and pepper to desire taste
- 2 cup white long grain rice
- 4 cup water
- 1 1/2 cup all purpose flour
- 2 tsp season salt
- 1/2 cup brown mustard
- 1/2 cup strawberry preserves
- wash and dry handd.
- in a deep fryer.
- heat oil to prepare for chicken.
- clean chicken and cut into cubes.
- in large bowl mix flour, salts and pepper.
- add chicken to flour mixture toss around.
- till chicken is lightly coated.
- strain excess flour into trash.
- carefully add chicken little at a time.
- fry til golden.
- meanwhile.
- gather veggys and boil in water until done.
- in a seperate pan.
- fill with 2 cups of rice and 4cups water.
- uncoverd til boil.
- reduce heat add 2tsp salt 1tsp butter.
- cover and do not check until 7 minutes.
- when all chickem is fryed.
- drain excess oil.
- mix together preservs and mustard.
- add cicken to coat.
- on plate add rice than chicken than veggies.
- enjoy
