Simple Chicken Casserole
- 1 tablespoon olive oil
- 1 leek, washed and sliced
- 200 g chicken breast fillets, chopped
- 1 1/2 tablespoons flour
- 2 potatoes, peeled and chopped Safeway 2 pkg For $5.00 thru 02/09
- 1 large kumera (orange sweet potato), peeled and chopped
- 1 small parsnip, peeled and chopped
- 100 g green beans, chopped
- 2 teaspoons chopped rosemary
- 2 1/2 teaspoons MY FIRST VEGEMITE
- 1 1/2 cups boiling water
- 1 corn cob, cut into wheels and steamed, for serving
- HEAT the oil in a large saucepan and saute the leek for 5 minutes or until softened.
- Add the chicken and saute for 4-5 minutes.
- SPRINKLE over the flour and cook, stirring for 1 minute.
- Add the remaining vegetables, rosemary, MY FIRST VEGEMITE and water to cover.
- Cover the pan and simmer for 15 minutes or until cooked.
- Spoon onto serving plates and serve with corn wheels.
- Serve immediately.
