Pumpkin Penne

  1. Cook pasta according to package directions.
  2. Drain and return to pot, covering to keep warm.
  3. Meanwhile, in a saucepan, heat oil on medium.
  4. Add shallots, cook until tender.
  5. OR add all ingredients, and bring to a boil; reduce heat to low.
  6. Simmer uncovered for 4 minutes, stirring occasionally.
  7. Toss pasta with sauce.
  8. Spoon into bowls and top with Parmesan.
