Chicken & Broccoli Cheese Casserole
- 2 packages Rice A Roni Broccoli Au Gratin
- 4-5 Chicken Breasts
- Olive Oil
- 2 bunches Broccoli
- 2 cans Campbell's Broccoli Cheese Soup
- 1-1/2 Cans Milk
- 1/2 Sleeve Saltine Crackers
- Preheat oven to 350 degrees.
- Cook Rice A Roni according to package instructions.
- While rice is cooking, flatten chicken breasts on waxed paper and cut in halves.
- Heat some olive oil in a skillet and cook chicken breasts on medium heat for about 5-6 minutes on each side.
- Remove from heat.
- Steam broccoli for about 5-10 minutes.
- Place chicken in a 9 x 13 glass baking dish.
- Spread broccoli evenly over the chicken.
- While the rice is still in the pan, pour broccoli cheese soup and milk into the rice and mix well.
- Pour mixture over the chicken and broccoli.
- Crush the saltines and spread over the top of the casserole.
- Place in the oven and bake for 25 minutes.
